White Chocolate Blueberry Truffles - a simple recipe without a baked dessert with only 5 ingredients: white chocolate, butter, thick cream, and dried blueberries, roll into soft sugar. WITHOUT ARTIFICIAL COLORS OR FLAVORS ADDED!

A delicious combo of melted white chocolate and dried blueberries rolled into irresistible purple balls, will only melt in your mouth.

I know, many of you will not agree that white chocolate is really chocolate, but for me it is chocolate. But white chocolate is an excellent base for this delicious treat.

White Chocolate Blueberry Truffles is basically melted white chocolate combined with a mixture of thick cream and butter to get a smooth and soft texture and is easily arranged to be rolled into a ball.

Because the hot weather is coming I want to try some of my favorites without a baked recipe using a new taste. I already have a white chocolate truffle recipe with lemon and orange flavors. I used extracts for both, but this time I didn't want anything artificial, either color or taste, so I used dried blueberry powder.

Blueberry powder can be difficult to find and expensive, but there are easy ways to make it at home. All you need to do is satiate the blueberries DRY FOOD in a food processor or coffee grinder. Berries must be freeze dried !!! Dried fruit is gummy in texture and will not be crushed into powder.

I have to make a few NOTES about white chocolate:

1. Use high-quality white chocolate. Don't use almond skin or chocolate chips.
2. Cut chocolate into very small parts to make it easier to melt.
3. White chocolate must be melted at very low temperatures. Lower temperatures mean more time to melt so you must be very patient when melting chocolate. If you are hot, chocolate can separate or size and become unusable. You have to melt it at a maximum temperature of 105 F and that means you can touch it with your fingers and not burn your finger.
4. A heavy cream-butter mixture must have the same temperature as chocolate when you combine it. Don't put hot cream in melted chocolate or you will burn it.
5. You should cool the mixture to room temperature for an hour or more and stir it from time to time if you see separate fat above.

Ingredients

• 9 oz. white chocolate-chopped into very small pieces
• 5 Tablespoons unsalted butter-softened
• 3 Tablespoons heavy cream
• 1.2 oz. freeze dried blueberries- powdered (pulse FREEZE DRIED blueberries in a food processor or coffee grinder to make the powder)
• ¼ cup powdered sugar

Instructions

1. In a small sauce pan simmer heavy cream. Remove from heat, add softened butter and stir until butter is completely melted and combined with heavy cream. Add powdered dried blueberries and stir to combine. Set aside.
2. Over a double boiler melt chopped white chocolate, stirring casually until smooth and completely melted. DO NOT heat above 105 F (if touched with your finger, it will feel about the same temperature as your body).
3. Gently stir in lukewarm blueberry mixture into melted chocolate. It should be approximately the same temperature as melted chocolate when you combine them.
4. Cool to room temperature, cover with plastic wrap and refrigerate until firm enough to roll the balls (2-3 hours or overnight). While it’s cooling take it from the fridge and stir with a fork to prevent the fat separate on top. Cover with plastic wrap and place back into the fridge.
5. Scoop out the mixture and roll into 1 inch balls. Clean your hands with paper towel after each truffle if the mixture stick too much or you can dust your hands with powdered sugar.
6. Roll each truffle into powdered sugar to coat them well. Store in the fridge in airtight container up to 1 week or freeze for longer storage
