Red Velvet Truffles
Description
Red Velvet Truffles are red velvet cake bites that are rolled and dipped in white chocolate.

- red velvet cake mix box (plus ingredients listed in the box for preparing the cake)
- 8 ounces of softened cream cheese
- 16 ounces of white chocolate
- 2 ounces of black or semi-sweet chocolate
Instructions
- Prepare a 9 x 13 inch cake according to package instructions, let it cool completely then crush the cake in a large bowl.
Add the softened cream cheese and knead gently with your fingers until the cream cheese is fully added.
Roll about 1 stack of tablespoons of the mixture into the ball and place it on a baking sheet lined with parchment paper. You will get around 35-40 balls. Set in the refrigerator to chill.
Melt white chocolate, remove the cake ball from the refrigerator and use a fork to dip it in melted chocolate. Place one ball each time in melted chocolate, roll the ball to coat the chocolate evenly, then tap the fork slightly on the side of the bowl to cut the excess chocolate and place the truffles on parchment paper. Put it back in the refrigerator until the chocolate hardens.
Melt the dark chocolate, transfer it into a small bag, cut the corners and the melted chocolate pipe over the truffle.
Store in the refrigerator.
