Toffee Cowboy Cookies

British flock, to be exact. Yup, maybe around the time you read this post, the little herd would run fast past the custom / immigration gate directly into the arms of Papa and Grammy who were very happy. It was our daughter Cait, her husband Josh and their four small children, Annie, Ellie, Lilly and Luke, who would arrive from London for a summer visit. And despite that, sometimes, it looks rather like a storm that blows into our quiet and empty lives, we love every second of chaos, commotion, and comedy.

It's not right for this Grammy not to have sweet food waiting for the kids under the cake dome. I am sure you will agree so I choose a recipe. I know you will like it too. It is an old favorite cookie that has been around forever even though I changed it a little.

This story tells that Cowboy Kue is very warm and delicious brought by cowboys while riding the path. Someone even calls this cookie the "original power bar" that originated in the old Wild West. I'm not sure this is the true history of this delightful cookie, but I know that little cowboys (women) who will roam our campfire this weekend, will flip when they peek under the dome of the cake.

Okay, so I have to put my own little Café signature in this classic and old-fashioned cookie. You know that, right? I added one of my favorite spice-flavored small poppers; toffee bits. I like the sweet and slightly crunchy taste of butter for cakes, brownies, bars, etc. You will find it on the chocolate chip section in many grocery stores (I can always find it at Super Walmart).

Ingredients

• 1 cup chopped pecans
• 1 teaspoon of extra virgin olive oil
• 2 teaspoons honey
• Asp teaspoon kosher salt
• 2 all all-purpose flour cups
• 2 teaspoons of baking powder
• 2 teaspoons of baking soda
• 1 teaspoon cinnamon
• Asp teaspoon salt
• 1 cup or 2 butter softened sticks
• 1 cup of light packed brown sugar
• ¾ cup granulated sugar
• 2 large eggs
• 2 vanila extract teaspoons
• 2 cups rolled oats
• 1 cup milk chocolate chips
• 1 cup of semi sweet mini chocolate chips
• 1½ cups sweetened shredded coconut
• 1 cup toffee bits
• 1 ½ cups crushed cornflakes I just overfill the cup, then push down on them with my hand to crush to 1 cup.

Instructions

Preheat oven to 350˚F. Line two sheet pans with parchment paper. Whisk together flour, baking powder, baking soda, cinnamon and salt in a medium size bowl. Set aside.

Combine pecans, olive oil, honey and salt in small pan lined with parchment paper or foil. Place in oven for 3 minutes. Remove and stir to coat pecans with oil / honey mixture. 

Return to oven and bake for another 6-7 minutes or until pecans are golden brown. Remove from oven and set aside to cool.

Place the butter and sugar in the bowl of a stand mixer. Beat on medium speed for 2-3 minutes or until light and fluffy, scraping down the bowl half way through.

Add eggs, at a time while continuing to beat. Add vanilla and mix.

With a mixer on low speed, add prepared flour mixture, beating until just combined. Add oats, chocolate chips (both kinds) coconut, toffee bits, cornflakes and prepared pecans. (If you want your cookies to look extra special, reserve about 2 tablespoons of chips and 2 tablespoons of toasted pecans for garnish - see the directions for this is step 6). 

Mix until everything is incorporated.

Scoop up dough (I use an ice cream scoop that holds 3 tablespoons) and roll into balls with your hands. Place on prepared sheet pans, spacing the cookies 2-inches apart. Each cookie is flatten slightly with the palm of your hand. Bake for 10 minutes. 

If you've reserved some chocolate chips and pecans for garnish, remove cookies from the oven at this point and scatter a few chocolate chips and drinks over the top of each cookie. Return to oven for another 3-5 minutes or until golden brown. (If you are using the cookies for 12-15 minutes or until golden.) Let cool cookies on pan pan for 5 minutes then transfer to a cooling rack.

Store in the airtight container or freeze in a covered container.
