Do Nothing Cake

Do Nothing Cake, aka Texas Tornado Cake - pineapple dump / poke cake with coconut walnut frosting; super moist and very easy to make!

I saw Do Nothing Cake, aka Texas Tornado Cake, on the internet for the first time about a year ago. I, of course, was interested in the title because it suggested easy recipes that would be made quickly and become good. And that's right.

This is from the initial recipe for some kind of junk cake - you just mix the cake ingredients together, throw the mixture into the baking pan and bake until done. The baked cake is skewered with a skewer and topped with simple coconut and walnut frosting. Frosting is somewhat runny and seeps into the cake.

There is no butter or oil or any fat in the cake mixture, but there are some crushed pineapple which makes this cake very moist.

The Do Nothing Cake fits perfectly with a spoon of vanilla ice cream or whipped cream on top. This is also the ideal potluck dessert!

UPDATE: Until now (August 29, 2016) the recipe for cake has been seen by more than 586 K viewers on Facebook. It received many comments and the majority of people asked: "Why is it called DO NOTHING cake?" Yes, this cake was made in the 1940s, before the cake mix. There is no need to use a kitchen scale because all ingredients can be measured with a cup. There were no beatings, checks, 30-minute egg beating and no special equipment involved. Frosting also does not require you to beat butter for 30 minutes until it expands. At that time, this was considered the correct "Do Nothing Cake".

Ingredients

CAKE:

• 2 cups of all-purpose flour
• 2 tsp baking soda
• 2 cups sugar
• 2 eggs
• 1/2 tsp vanilla extract
• 2 1/2 cups (20 oz) crushed pineapple, undrained

FROSTING:

• 1 stick butter, 113 g
• 3/4 cup evaporated milk
• 1 cup sugar
• 1 cup of chopped nuts
• 1 cup coconut shredded

Instructions

CAKE: Mix all cake ingredients with a spoon. Pour into oiled 9x13 inch (23x33 cm) pan and use 350 F (175 C) oven for 30 - 40 minutes or until the center of the cake is done.

Tornado Cake is still hot, poke it with a skewer to help cool frosting into cake. Immediately pour frosting over it.

FROSTING: Cook butter, evaporated milk and sugar until thickened, about 5 minutes, stirring often. Add nuts and coconut.
