S’mores Cookie Cups

They are very good. How dare I say, I like them more than classics ... more than that ... no longer smells like smoke from fire, no more sticky hands, and no more dirt and sticks 🙂

Well, I guess it's still a mess because their little hands will remain sticky. But at least you don't have sticky hands that are combined with dirt! Easily the worst combination ever!

S'mores baking glass is baked in a mini muffin pan. Graham cracker cake base, with roasted marshmallows, and a sticky chocolate slice on top! Now you can enjoy s'more campfire toast all year for dessert.

HOW TO MAKE THIS RECIPE

For this cake cup recipe, you will need 2 Hershey Milk Chocolate chocolates (the size you find at checkout) which are broken into square pieces. One bar will have 12 boxes.

Then you will need a large marshmallow that is cut in half. Shortcuts, so you end up with two halves of the circle.

It's easier to use kitchen scissors to cut the marshmallows, but if you don't have them, spray the knife with a cooking spray and then cut the marshmallow.

Then you will mix a simple Graham Cracker cake mixture and press it into a mini muffin can. You will have enough to fill 24 mini muffin cans.

Also, make sure and press the dough down so that it is flat above.

After baking, immediately take 1 teaspoon measuring and press the indentation in the middle of each cup of cake. Press one piece of marshmallow into the groove, the side sticks down, and let it cool completely.

Place the square chocolate on top of the marshmallow and bake until the chocolate is toasted.

Alternatively, if you want a truly baked marshmallow, you can bake the marshmallow first (without chocolate) and then press the chocolate over the roasted marshmallow.

Ingredients

• 1 cup of graham cracker crumbs
• 1 1/4 cups flour
• 1/2 teaspoon of baking soda
• 1/4 teaspoon salt (use 1/2 teaspoon if using unsalted butter)
• 1/2 cup butter, softened
• 1/2 cup brown sugar
• 1/3 cup sugar
• 1 large egg
• 1 teaspoon of vanilla extract
• 12 large marshmallows, cut in half
• 2 Hershey's (1.55 oz each) chocolate bars

Instructions

Preheat oven to 350 degrees. Spray a mini muffin pan with cooking spray.

In a small mixing bowl, combine graham crackers, crumbs, flour, baking soda, and salt. Stir with a wire whisk. Set aside.

In larger bowl, with a handheld electric mixer, blend butter, brown sugar, and sugar until creamy and combined.

Add in egg and vanilla extract. Mix well.

Dump in the bowl of dry ingredients, mix on low speed just until combined. The dough will be crumbly.

Scoop dough into the mini muffin tins. Their fill is full and press down slightly so the dough is even on top. You will have a perfect amount of fillings for all 24 mini muffins tins.

Bake for 8 minutes. They will look like they're not done, but trust me, they will be perfect.

Immediately after baking, take aoon size of measuring spoon and press into the dough. You want to make an indent for the marshmallow to sit in. Place a half of marshmallow into each indent in the muffin cups. Sticky side of the marshmallow down.

Let cool for 20 minutes.

Place one square of chocolate on top of each marshmallow.

Turn the oven broiler to high. Place muffins tin pan under the broiler for 1-2 minutes. Watch carefully. This toasts the marshmallows fast.

Let cool for about 10 minutes and eat right away for a warm, gooey s'more or let cool completely.

** If you don't want the chocolate very melted (like what is pictured) broil the pan with the marshmallows first, and then after taking out the oven, press one chocolate on top of each toasted marshmallow. The chocolate is more of a chocolate chocolate that retains its shape almost perfectly when you do it this way. I have made these two ways and either way is delicious. **

Recipe Notes

Use kitchen scissors to cut the marshmallows. If you don't have any, then spray the knife with cooking spray and cut them in half using that.
