DELICIOUS BLEUBERRY BISCUITS
Delicious Blueberry Biscuits
INGREDIENTS:
BISKUIT:
• 2 C. Multipurpose Flour, (I use White Lily, flour available in most stores in the South).
•1 teaspoon. powder developer.
• 1-1 / 2 Tsps. salt.
• 3 Tbsps ... sugar.
• 1 unsalted butter stick (VERY cold).
• 3/4-ish C. buttermilk (just use until the mixture is quite wet).
• 1 C. frozen blueberries (we use fresh blueberries that have been frozen overnight).
• 1/2 Stick liquid salted butter.
SAUCE:
• 1 C. powdered sugar.
• 3 Tbsps. milk, (or more if it's not thin enough).
• 1/2 Tsp. vanilla.
INSTRUCTIONS:
1. Cut the butter into a small pat and place it on a baking sheet covered in wax paper. Paste it in the freezer for at least 10 minutes. Prepare a cast iron skillet with a little bacon oil, if available. The easiest thing: fry a piece of smoked meat, remove the pan, and you're ready to do it!
2. Preheat the oven to 500ºF.
3. Stir with the sauce ingredients (powdered sugar, milk, vanilla), and make sure the powdered sugar is completely dissolved.
4. Combine all dry ingredients (flour, baking powder, salt, sugar) together and then cut the cold unsalted butter. Cut until the butter is about the size of a pea, relatively well mixed. Add buttermilk. Add slowly until you have enough dough where the mixture is separated from the side of the bowl. Stir until well blended and roll to the surface of flour.
5. Before kneading, prepare a large area to knead ... (I use a large cutting board for easy cleaning!) Sprinkle the area with flour. Place the mixture over the flour area and sprinkle a little flour over the mixture. Press the mixture out (no need to roll with a pin) and spread it to about 1/2 ″ thick. Put blueberries on top of the mixture. Knead it several times and smooth it back to about 1 ″ thick ... (Honestly, the thicker the better, because they rise so beautifully!) The berries will probably start bleeding to the dough and you will start to see blue spots as defrosting.
6. Place the biscuits in an iron skillet and make sure the biscuits touch.
7. Bake at 500ºF for about 10 to 12 minutes. Somewhere around 6-8 minutes, remove the pan from the oven and brush the biscuits with liquid salted butter. This is an integral part of the roasting process. And be liberal with it, rub the sides of the biscuits if they show. When you begin to see a light brown top, (and broken blueberries), remove it. The temperature in the middle of the biscuit will remain very hot once it exits the oven and will continue the cooking process.
NOTE: Some people say that they have to leave their biscuits for more than 10-12 minutes. I have never had to leave mine longer, but if you are afraid your property is not finished and want to leave them longer, be sure to watch them like eagles! I promise, they will go from being burnt in just a few seconds!
When you remove the biscuits from the oven, let the pan cool for about 10 minutes. Pour the sauce over the biscuits after 10 minutes. Use as much or as little sauce as desired.
Serve immediately!
